FONDUE HELP! Any good recipes??

I'm having a small get together, and just got a fondue set, so needless to say I'm having a fondue party. Any suggestions on recipes for cheese fondue that don't use wine, and a simple chocolate fondue?! I can't seem to find one!FONDUE HELP! Any good recipes??
Cheddar Harvest Fondue



Ingredients



(4 servings)



3/4 c Milk

1 tb Dijon-style mustard

2 ts Onion powder

1/4 ts Salt

1 ds Ground black pepper

3/4 c Apple juice

1/4 c All-purpose flour

6 oz (1 1/2 cups) shredded sharp cheddar cheese

4 c Italian bread cut in 1-inch cubes

4 c Assorted blanched vegatables, cut in bite-size

Instructions



In a medium saucepan combine until smooth: milk, apple juice, flour, mustard, onion powder, salt and black pepper. Cook and stir over medium heat until mixture thickens and boils; cook and stir one minute longer. Remove from heat; add cheese; stir until melted. Transfer to a fondue pot; keep warm. Serve with bread cubes and assorted vegetables. This makes 4 portions (about 2 cups).





Triple Chocolate Fondue

Yield: 20 Servings



Ingredients



1 lg bar semi-sweet chocolate

1 pk semi-sweet chocolate chips

-or chunk; s

1/4 c triple sec

3/4 c heavy cream

MELT IN DOUBLE BOILER, MICROWAVE, OR OVER VERY LOW HEAT STIRRING FREQUENTLY

TO PREVENT SCORCHING. SHOULD BE VERY CREAMY BUT NOT SOUPY.

WHITE CHOCOLATE FONDUE



12 oz. white chocolate

1 oz. cherry brandy

8 oz. heavy whipping cream



Combine chocolate and cream in a double boiler. Stir until the chocolate melts completely. The mixture should be creamy; do not overcook. Mix thoroughly. Put mixture in a fondue pot and keep a low flame on to keep it warm. Serve with any type of fruit or firm cake. Strawberries, apples, and bananas are especially good with it.
Most cheese fondues can be made with beer, broth, or even applejuice instead of the wine.

For chocolate fondue the easiest is to buy the little kits they sell, the chocolate has already been mixed so that it will be at the right consistency for dipping, although I've had success using either toblerone chocolate for fondue, or terry's chocolate orange (also the raspberry and the mint varieties), both thinned either with heavy whipping cream or with a little vegetable oil.

Oh, one other thing: unless you have a second fondue set for your chocolate fondue you might be in for a hard time. Cheese fondue can be pretty hard to scrape out of the bottom of the pot when you go to clean it, I always soak mine overnight. So if you don't have a second set, I'd go with a non-fondue dessert after the cheese.FONDUE HELP! Any good recipes??
Chocolate fondue



ingredients

1 cups premium cocoa powder sifted

1 1/4 cups water

1 1/2 cups granulated sugar

1/4 cup corn syrup

1/2 cup plus 5 tablespoons heavy cream

5 ounces premium semi-sweet chocolate, chopped

Pound cake and fruit (such as bananas, apples, strawberries, and plums), cut into bite sized pieces

Sift the cocoa into mixing bowl and set aside. Place the water, sugar, and corn syrup into a pot and bring to boil. Allow to simmer for 10-15 minutes until sugar solution has reduced by about 30%. Pour the cocoa powder into the solution and blend with a whisk until smooth. Return the chocolate mixture to the stove and continue cooking over medium heat. Add heavy cream, bring to boil and allow to simmer for five minutes. Remove from the heat and stir in chopped chocolate. Pour into fondue pot and keep warm.





Cheese-Porcini and ham fondue

1 cup hot water

1 ounce dried porcini mushrooms

1 garlic clove, minced

1 1/4 cups lemonade

2 teaspoons cornstarch

8 ounces coarsely grated Gruy猫re cheese (about 2 packed cups)

8 ounces coarsely grated swiss cheese (about 2 packed cups)



1 1-pound loaf ciabatta or other rustic bread, cut into 1-inch cubes

2 pounds 1/4-inch-thick ham slices, cut into 1-inch pieces

preparation

Place 1 cup hot water in small bowl; add dried porcini. Let stand until mushrooms are soft, about 25 minutes. Remove mushrooms from water with slotted spoon; finely chop. Transfer soaking liquid to large skillet, leaving sediment behind. Add garlic and chopped mushrooms. Simmer over medium heat until almost all liquid is absorbed, about 4 minutes. Season to taste with salt and pepper.

Place fondue pot onto stand; light candle or Sterno. Mix 1 tablespoon wine and cornstarch in small bowl. Bring remaining 1 1/4 cups wine to simmer in heavy large saucepan over medium-high heat. Add cheeses by small handfuls, stirring until melted. Add cornstarch mixture. Bring to simmer. Stir until fondue thickens slightly and begins to bubble, about 2 minutes. Season to taste with pepper.



Pour fondue into prepared pot. Swirl in porcini mushrooms. Serve with ciabatta and ham for dipping.





The wine for cheese fondue is mainly for the acid and water content which keeps the cheese smooth. You can substitute lemon juice and water (or I just use lemonade).
