I am having a fondue party soon!- A "Flashback to the 70s" bash. Can anyone help me with recipes, etc?

We are going to be going "all out" so to speak, with clothes from that era as well as music, and of course food. Everyone says that FONDUE is the thing to serve. I'd like for you to share your easy fondue recipes as well as what foods you used for dipping. For the fondue, I'm looking for all sorts of recipes from savory cheese to sultry chocolate. I have checked the net and found lots of sites, but would would really like to hear about is your personal experiences with throwing 70s theme parties complete with fondue! The following *very easy* chocolate fondue recipe is a combination of

several other recipes and some information I received from others on

the net a few weeks ago.



Ingredients: 1/2 cup or 150ml pure cream

1 x 250gm block of GOOD dark chocolate (definitely not

compound chocolate %26amp; the better the chocolate, the better

the fondue!)

1 - 2 tablespoons of rum or your favourite liqueur



Bring cream to a gentle boil. Remove from heat and add broken up

chocolate. Stir until chocolate has completely melted. Be patient!

Return to very gentle heat only if you have to. Finally, add rum or

liqueur and stir until combined. (Do not add liqueur while the

chocolate mixture is over heat.)



Use chopped fresh fruit to dip in fondue - especially bananas, rock

melon, pineapple, pears, kiwi fruit, orange and mandarin segments and,

of course, strawberries.

Amount Measure Ingredient -- Preparation Method

1 cup Cottage cheese -- creamed

1/4 cup Milk

2 tablespoons Butter or margarine

1 1/2 tablespoons Cornstarch

1 dash Garlic powder

1/4 teaspoon Dry mustard

3/4 cup Milk

4 ounces Pasteurized process cheese -- - (sharp Cheddar), s

2 ounces Pasteurized process cheese -- - (Swiss), shredded

1 pound Loaf French bread -- - cut into cubes



Mix cottage cheese with 1/4 cup milk in a blender until smooth.



Melt fat in a saucepan. Stir in cornstarch, garlic powder, and dry mustard;

mix well.



Add 3/4 cup milk. Cook over medium heat, stirring constantly until

thickened, about 2 to 3 minutes.



Reduce heat. Stir in cottage cheese mixture. Add remaining cheeses, stirring

until cheeses are melted. Serve with cubes of French bread for dipping into

fondue mixture.





Bouillabaisse Fondue

PREP AND COOK TIME: About 30 minutes

NOTES: Use a cooking pan, metal chafing dish without the water bath jacket, a metal fondue pan, or an electric fondue pan with heat turned to high.



MAKES: 4 to 6 servings



12 to 18 red thin-skinned potatoes (1 1/2 in. wide), scrubbed

1/2 pound boned, skinned firm-flesh fish such as halibut

1/2 pound sea scallops

1/2 pound shrimp (31 to 40 per lb.), shelled and deveined

Bouillabaisse broth (recipe follows)

Rouille (recipe follows)

Croutons (recipe follows)



1. In a 3- to 4-quart pan over high heat, bring about 1 quart water to a boil. Add potatoes. Cover and simmer until potatoes are tender when pierced, 15 to 20 minutes. Drain; keep warm.



2. Meanwhile, rinse fish, scallops, and shrimp; pat dry. Cut fish into 1/4-inch thick slices about 2 inches long. Cut scallops crosswise into 1/4-inch-thick slices. Cut shrimp in half lengthwise. Arrange fish, scallops, and shrimp on a flat dish.



Rouille



PREP TIME: About 5 minutes

NOTES: If making up to 1 day ahead, cover and chill.

MAKES: About 1 cup



In a small bowl, mix 1 cup reduced-fat or regular mayonnaise, 1 tablespoon minced garlic, 1 tablespoon lemon juice, and 1/2 teaspoon cayenne.

400 g mature cheese

(try once nail cheese or herbs cheese)

2,5-3 dl (dry) white wine

1 tablespoon cornstarch

Salt

Black pepper

1/2 teaspoon nutmeg

French bread or other tasty bread



Ingredients:

500 gr beefsteak

Salt and pepper

100 gr shiitake

100 gr haricot verts

1 red or green bell pepper

6 spring onions

1 onion in rings

1 can bamboo shoots

60 ml vegetable oil

Try foodtv.com Look up Good Eats. There is an entire episode dedicated to that subject.

Get some good disco music, white suits and shoes for the men, puffy hair and Saturday night fever disco dresses for the ladies. Maybe even the fat Elvis costume from Vegas would be great along with The Bee Gees.

Now I haven't tried any of these, and I've never had a fondue party, but I have eaten fondue in a restaurant and it was good. The thing that took the longest was cooking the meat in a broth fondue. It was all delicious though.
