~Chocolate Fondue~
"Recipe from our Chef Patrick Asfaux
This recipe was added onto the list of our restaurant "La Campagne Lotoise" in 1994. We were serving it with "madeleines" (note of the transalator : small delicious cakes - refer to the recipe in this site) cooked upon order and the customers were dipping them one after the other and again into the hot chocolate ... This has lasted for 5 years and I am sure our customers do remember.
Ingredients for Chocolate Fondue for 6 persons :
500 grams (2.2 lb) black chocolate (over 56% cocoa) in small pieces
20 centiliters (7 fl oz) milk
40 centiliters (13 fl oz) liquid cream
1 small bag of vanilla flavoured caster sugar
1/2 cup of strong (expresso) black coffea
100 grams (3.3 oz) butter
Directions:
1. Put the chocolate into a salad bowl.
2. Heat nearly to boiling point the milk with the cream and the vanilla sugar and pour on the chocolate.
3. Stir well with a whip untill the chocolate is melted and add the butter cut in small cubes and the coffea.
4. Pour into the fondue pot put on the middle of the table (you will have lighted it).
You and your guests now just need to prepare sweet "kebabs" with the fondue forks and then dip them into the chocolate fondue :
- half warm "madeleines", roasted (7 minutes in the oven at 356掳F) gingerbread cubes, presented on nice dished on the table
- cubes of fresh fruit (pineapple, apple, pear, banana (sprinkle them with lemon juice before making cubes to avoid blackening), fresh summer fruit (apricot, peach, melon, grape), fresh red fruit (the best for me : strawberry, blackberry, black currant ...), all presented in nice dishes on the table."
I am Me favorites are pineapple, banana %26amp; strawberries.
"This chocolate fondue will remain, for sure, in the young (and less young)'s memory !
A special loving hello for Laurent, our chef gone in other skies and for Gilbert Roger, our city mayor, loyal among the loyal."

French Fondue Chocolate Dessert Recipe鈥?br>
Mouth-Watering Good!
Fondue au Chocolat鈥?The ultimate melt-in-your-mouth dessert!
Preparation Time: 15 minutes
Ingredients: (4 people)
8 oz. Semi-sweet Baking Chocolate (try and find the highest quality baking chocolate you can. Or, use your favorite high quality dark chocolate with 70% cocoa content.)
1 cup Cr猫me Fra卯che (or heavy cream)
1/2 cup Strawberries (sliced in half)
6 Apricots (cut in quarters)
2 Pears (peeled and cut in slices)
1/2 Seedless Grapes
3 Clementines (peeled and separated)
How to Make It:
1. Prepare all fruits. If you are not making the fondue right away, put fruits in refrigerator.
2. Break chocolate into pieces. In a bain-marie or a double-boiler, melt chocolate. Make sure that the water in the bain-marie never boils, just let it simmer.
3. Once chocolate has melted, slowly stir in cream, until it is smooth. Again, make sure the bain-marie water never boils!!!
4. Serve right away with fruits.
Voil脿!
Variations:
Of course you can use whatever fruits you would like to!
Also, you can serve with small butter cookies, cigarette cookies, or French Madeleine biscuits.
There is no reason not to be inventive here! So many foods taste good dipped in hot chocolate, so please use your imagination and try out new ideas!
In terms of the chocolate, traditionally, a French fondue chocolate dessert recipe will always be made with dark (or semi-sweet) chocolate. However, there is no reason why you can't make this same recipe with milk or white chocolate -- I've never heard of the French chocolate fondue recipes police crashing anyone's dinner party!!! I would say, just make sure that whatever chocolate you are using is of reasonably high quality.
Serving Ideas:
As I mentioned before, you can serve this chocolate fondue dessert recipe right in your cooking pot -- just be careful that you don't burn your table! However, if you want to make things fancier, pour the hot chocolate into a dessert bowl and serve it right away.
In terms of utensils, if you have fondue forks, use them, if not just use regular forks, or if you prefer, short skewers -- just be careful not to stab yourself!
Whatever you choose, I am sure that you will love and greatly enjoy this fabulous French fondue chocolate dessert recipe! Chocolate fondue recipes are always a great success and make entertaining particularly enjoyable!"
