In our family it is the tradition to make a classic Cheese Fondue on Christmas eve:
chocolate fondue recipe
* ounces semisweet chocolate
* 1/2 cup whipping cream
* 2 teaspoons Kirsch brandy, Grand Marnier or rum, or to taste
If you have a double boiler, melt the whipping cream and chocolate in the top half of the boiler. If not, half-fill a heavy saucepan with water and heat until barely simmering.
Place the chocolate and whipping cream in a metal bowl over the saucepan, making sure the bottom of the bowl doesn't touch the simmering water.
Turn the heat down to low and melt the chocolate with the whipping cream, stirring constantly and making sure the chocolate doesn't burn.
Pour the mixture into a ceramic pot made for dessert fondues and stir in the brandy or rum. Keep warm on low heat.
If you do not have a double boiler then put a metal bowl on top of a pan filled with water.
You can dip: pretzels, fruit, cakes, cookies, candies - anything

1 garlic clove, halved crosswise
1 1/2 cups dry white wine
1 tablespoon cornstarch
2 teaspoons kirsch (optional)
1/2 lb Emmental cheese, coarsely grated (2 cups)
1/2 lb Gruy猫re, coarsely grated (2 cups)
Rub inside of a 4-quart heavy pot with cut sides of garlic, then discard garlic. Add wine to pot and bring just to a simmer over moderate heat.
Stir together cornstarch and kirsch (if using; otherwise, use water or wine) in a cup.
Gradually add cheese to pot and cook, stirring constantly in a zigzag pattern (not a circular motion) to prevent cheese from balling up, until cheese is just melted and creamy (do not let boil). Stir cornstarch mixture again and stir into fondue. Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes. Transfer to fondue pot set over a flame.

2-oz. brandy, optional
Set fondue pot on 4. Mix ingredients and stir frequently until melted. Reduce heat to 1 (low) to serve. To dip, use: chunks of angel food cake, fruits, marshmallows and nuts.
