My fondue goes hard and thick why?

i ahev one of those fondue bowls with the candle at the bottom and whenever i make fondue i wait for the chocolate to melt then i add the cream. when i add the cream why does it go all thick and harder?My fondue goes hard and thick why?
Because it cools down. This happens if you observe how butter melts when you heat it but when it cools, it goes hard again. The same happens with fondue. Put less cream in and wait till the heat builds up again before adding so much cream . The cold cream cools it too quickly.
Add the last 4 ingredients too



INGREDIENTS

32 ounces milk chocolate, grated

1 1/4 cups heavy cream

1 tablespoon instant coffee powder

1 teaspoon vanilla extract

1 teaspoon white sugar

1/3 cup hot water





DIRECTIONS

In a saucepan over medium heat, melt the chocolate with the heavy cream. Mix in the instant coffee, vanilla extract, sugar, and hot water. Continue to heat, stirring frequently, until the mixture is smoothMy fondue goes hard and thick why?
Melted chocolate solidifies pretty fast. Maybe you have the pot too close to the flame? Or maybe you should try using a chocolate that has more cocoa and less butterfat.
Maybe because you're adding the cream when it's still cold? Cold liquid with hot liquid tends to chill the hot stuff. Try warming the cream.



Then again, I'm a Food Network junkie, and everytime I see anyone melting chocolate, they actually add in the hot liquid (in your case the cream) to the solid chocolate and let it sit until the chocolate melts before they stir it. Try doing it that way.My fondue goes hard and thick why?
You have to use a certain type of chocolate.. I think it is bakers chocolate.. It is easier to use a double bolier to melt the chocolate.. I have done it both ways but I have never added cream..
because you are adding cold cream, it needs to be very hot, almost boiling, but not quite. just at beginning of a simmer. don't boil, it will curd. add the scalded cream to the chocolate, it will work wonderfully, and the chocolate fondue will glisten... good luck......................
Yup this one's easy,just make a simple chocolate ganache,Always heat your cream first ,then add your chocolate.Let sit for a couple minutes ,stir,finished
