I want to make it a soft, melted "Fondue" style chocolate. However I'd like it to be cold as well. Sort of like a cold, chocolate cream coating but made from pure chocolate.
Like I want to coat food it in then freeze it, but the food I'm trying to coat it in can not tolerate heat.
I was wondering, if the chocolate cooled, it won't solidify quickly or anything right?

Get a double boiler. The bottom pot will have water. Put it on heat and lets it warm up. Then put the second pot on top and add in the chocolate pieces. Soon enough, the chocolate will start melting. Stir it until its smooth and when you are satisfied, take the double boiler off the heat and set aside Or put the heat to the lowest and let it keep warm. Now you can dip and freeze ^^
Sounds like you might want to make a ganache. Equal weights of heavy cream and chopped chocolate. Bring the cream to a boil and pour it over the chocolate in a bowl. Let it sit a minute then stir it gently until it's all smooth and the cream has disappeared into the chocolate. Let it cool to room temperature or cooler (keep stirring it now and then to let it cool evenly) and you can dip things in it then freeze them. It will firm up when refrigerated, but not like hard chocolate--think "truffle" because that's basically what it is. 12 oz. dark chocolate
8 oz. heavy whipping cream
pinch of salt
Warm the cream over moderate heat until tiny bubbles show and begins to lightly and slowly boil. Add the chocolate and whisk until smooth and full incorporated.
If the chocolate begins to feel a little stiff, add a tablespoon of heavy cream and stir. It will help it go a little longer.

I just use a metal bowl on top of a sauce pan with water. You don't need to buy a double boiler.
