The important thing when melting chocolate is to be sure to not introduce any water, which can make it seize up and become lumpy. Just about any kind of cream or milk will work. I make mine with just semi-sweet chocolate chips and coconut milk, which has enough fat in it that I don't need to add any butter.What type of cream is needed for Chocolate Fondue to prevent the chocolate from being lumpy?
