Why is my fondue chocolate set not boiling right? its all chunky?

You don't boil it, just gently melt it, and often need to add oil, or butter, to get it smooth enough to use.

Heating too fast, or to too high a temperature, can cause it to become granular in texture.

You also need the right sort of chocolateWhy is my fondue chocolate set not boiling right? its all chunky?

You need a lot of good quality chocolate, like Godiva or Ghiradelli. Cut it into bite-sized pieces and put it in the already warm pot. Stir often so the chocolate doesn't burn. You need chocolate with a high fat content, or you need to add some butter or veggie oil to the mixture to make it smooth. The chocolate shouldn't boil or form bubbles at the surface. Heat it slowly and make sure it doesn't burn.

Also, if you're using old chocolate (more than a month or two) it won't melt right. Why is my fondue chocolate set not boiling right? its all chunky?
